Ingredients
  1. 2 (15 oz) cans black beans
  2. 8 fl oz chicken or vegetable broth
  3. 2 (14.5 oz) cans diced tomatoes
  4. 4 cloves garlic
  5. 4 medium sweet potatoes
  6. 1 medium yellow onion
  7. 1 package onion soup mix
  8. 1 lb ground beef
  9. black pepper
  10. chili powder
  11. cumin
  12. salt
  13. virgin coconut oil
Instructions
  1. Heat a large pot over medium-high heat.
  2. Add oil and brown the ground beef, stir in onion soup mix and continue to brown.
  3. Remove ground beef and place in a bowl
  4. Peel and small dice onion. Wash and medium dice sweet potatoes (without peeling).
  5. 1 medium yellow onion
  6. 4 medium sweet potatoes
  7. Coat bottom of saucepan with oil. Add onion and potatoes. Stirring frequently, cook until onion is softened, 3-4 minutes.
  8. 2 tbsp virgin coconut oil
  9. Peel and mince garlic.
  10. 4 cloves garlic
  11. Once onion is softened, add garlic, chili powder, cumin, salt, and pepper to saucepan. Stir and cook until fragrant, 15-30 seconds.
  12. 1 tbsp chili powder
  13. 2 tsp cumin
  14. ½ tsp salt
  15. ¼ tsp black pepper
  16. Add broth and tomatoes; bring to a boil. Reduce heat to a simmer, cover, and cook chili until potatoes are tender, about 15 minutes.
  17. 8 fl oz (1 cup) chicken or vegetable broth
  18. 2 (14.5 oz) cans diced tomatoes
  19. add reserved ground beef
  20. Drain and rinse beans; add to saucepan while the chili is simmering.
  21. 2 (15 oz) cans black beans
  22. Serve once sweet potatoes are soft and tender 😉
