Instant Pot Chicken Salsa Rice Bowl & Shredded Tacos

  1. 3 tablespoons oil
  2. 3 boneless skinless chicken breasts
  3. 3 to 4 tsp taco seasoning
  4. 1 med onion, sliced
  5. 1 cup salsa
  6. 1 can corn kernels
  7. 1 to 15 ounce can diced tomatoes with chilies
  8. 1 can of black beans or half a large can
  9. 2 tsp taco seasoning
  10. rice {optional}
  11. corn tortillas {optional}
  12. shredded cheese {optional}
  13. sour cream {optional}
  1. Turn Instant Pot onto Saute mode and when it says hot, add 3 tbsp of oil
  2. In a large ziplock bag add chicken breasts and a tsp of taco seasoning per chicken breast and shake till well coated.
  3. Brown the chicken on both sides
  4. Remove the chicken and add the onion
  5. Use a wooden spoon to get all those bits off the bottom of the pot and cook those onions well
  6. Place the chicken breasts back in the pot
  7. Add salsa, corn, black beans, tomatoes and stir it up
  8. Turn Instant Pot to Manual for 8 minutes
  9. Natural release for 3 minutes then do a quick release
  10. Remove the chicken breasts and shred them up
  11. Return the shredded chicken to the Instant Pot and mix it up and simmer
  12. Taste the sauce and adjust the seasoning with taco seasoning 1 or 2 tsp
  13. Serve over rice in a bowl with some shredded cheese and sour cream
  14. Or Warm up some corn tortillas and make some delicious tacos
  15. We ate the rice bowl for dinner and made tacos with the leftovers yum!!
