Oven Fried Chicken With Honey Mustard Glaze & Garlic Herb Skillet Potatoes

Chicken
  1. 2 chicken breasts sliced in half
  2. Kosher salt and freshly ground black pepper, to taste
  3. 2 large eggs
  4. 1 1/2 cups Panko
  5. 1 teaspoon smoked paprika
  6. 1/4 cup vegetable oil
  7. 1 cup all-purpose flour
  8. 2 tablespoons chopped fresh parsley leaves
Honey mustard glaze
  1. 1/4 cup mayonnaise ( or Just Mayo )
  2. 2 tablespoons honey
  3. 1 tablespoon mustard
  4. 1 tablespoon Dijon mustard
Skillet Potatoes
  1. 1 tablespoon butter
  2. 1 tablespoon olive oil
  3. 4 russet potatoes, peeled and thinly sliced
  4. 1 teaspoon chopped fresh rosemary
  5. 1 tablespoon chopped fresh thyme
  6. 1 teaspoon chopped fresh oregano
  7. 1 tablespoon chopped fresh flat-leaf parsley
  8. 1/4 teaspoon paprika
  9. salt and pepper to taste
  10. 1 1/2 tablespoons minced garlic
  11. 1/8 teaspoon cayenne pepper (optional)
Veggies
  1. 2 cups green beans
  2. olive oil
  3. salt and pepper
  4. 2 cloves garlic
Honey Mustard Glaze
  1. Whisk together mayonnaise, honey and mustards in a small bowl; set aside.
Chicken
  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat; set aside.
  2. Season chicken with salt and pepper, to taste.
  3. In a large bowl, whisk eggs. In another large bowl, combine Panko, paprika and vegetable oil; season with salt and pepper, to taste.
  4. Working one at a time, dredge chicken in the flour, dip into the egg mixture, then dredge in the Panko mixture, pressing to coat.
  5. Place chicken onto the prepared baking sheet and bake for 35-40 minutes, or until the crust is golden brown and the chicken is completely cooked through.
  6. Serve immediately with honey mustard glaze, garnished with parsley, if desired.
Skillet Potatoes
  1. Melt the butter and heat the olive oil in a large skillet over medium heat
  2. Arrange the potato slices across the bottom of the skillet in a single layer.
  3. Cook without stirring for 5 minutes, or until the potatoes have begun to brown on the bottom.
  4. Sprinkle potato slices with rosemary, thyme, oregano, parsley, and paprika.
  5. Turn the potatoes, and continue cooking 5 minutes, or until tender.
  6. Turn off the heat, and sprinkle the garlic and cayenne over the potatoes.
  7. Lightly toss for about 1 minute, until the garlic has softened.
Veggies
  1. Boil green beans till tender
  2. strain and toss with olive oil and 2 cloves minced garlic
  3. salt and pepper to taste.
