Sauteed Chicken Thighs with Mushroom Sauce & Roasted Green Beans

Ingredients
  1. 1 cup chicken broth
  2. 2 lb boneless skinless chicken thighs
  3. 2 lb green beans
  4. 1/2 lb white mushrooms
  5. 4 tbsp flour
  6. 1 tbsp butter
  7. salt
  8. pepper
  9. onion powder
  10. garlic powder
  11. paprika
Instructions
  1. Preheat oven to 425
  2. wash and trim green beans, transfer to baking pan
  3. drizzle with 2 tbsp extra virgin olive oil, 1/2 tsp salt 1/4 tsp black pepper
  4. roast until tender crisp for 10-15 minutes tossing half way through
  5. preheat pan on medium high
  6. in a medium bowl mix together 4 tbsp flour with 1/2 tsp salt 1/2 black pepper 1/2 tsp garlic powder and 1/2 tsp onion powder 1/2 tsp paprika
  7. add chicken to bowl and toss to coat well
  8. coat bottom of pan with 2 tbsp extra virgin olive oil and cook the chicken on each side for 2-3 minutes until golden brown
  9. wash, dry and halve 1/2 lb mushrooms
  10. remove chicken and add 2 tbsp extra virgin olive oil, add mushrooms and sautee for 5-6 minutes
  11. return chicken and add 1 cup chicken broth
  12. lower the heat to medium and let simmer for 10-20 minutes
  13. remove chicken and add 1 tbsp butter
  14. thicken sauce and then serve
Notes
  1. Serve with rice!
