Ingredients
  1. 20 ounces pineapple chunks and juice / 1 whole pineapple and some pineapple juice
  2. 1 tbsp cornstarch
  3. 1 tbsp sugar
  4. 1/2-1 tsp ground ginger
  5. 2 tsp soysauce
  6. 1/2 cup picante sauce
  7. cooking oil
  8. 2 med green peppers/1 green 1 red
  9. 1-2 lb boneless skinless chicken breast, cut in strips/chunks
  10. enough rice for each person 😉
Instructions
  1. Drain pineapple juice into a bowl, add cornstarch, ginger,sugar,soy sauce,picante sauce and mix until smooth, set aside.
  2. grab a wok, add 1 tbsp of oil and heat on med high
  3. cut your chicken up and then dash with salt and pepper, toss in the wok give it a stir and let sit for a minute, lets get that chicken browned! toss and continue to cook until done
  4. remove chicken, toss in 1 tbsp oil to wok and add your veggies, add a little water and cover them, give them a toss and wait till there done.
  5. When veggies are done toss in the chicken and the sauce and pineapple, stir and heat till sauce thickens and then serve on cooked rice 😉
Notes
  1. we usually use fresh pineapple 😉
  2. rice cookers are awesome
  3. you can skip the sugar and cornstarch, use a cup of picante, cpl tbsp of soy sauce then.
  4. if you want fresh ginger and garlic have at it 😉
